While we're on the subject: Great Taste found an interesting rhubarb recipe created by Josh and Brent of Beekman 1802. Check it out.

Yes, local asparagus is here.
Check out what Lanesboro resident Peggy Hanson is doing with asparagus on her wonderful blog:
April 22 is Earth Day.....Let's try to make the best of it.
Here is an Earth Day dinner idea: Make a 100 percent local, sustainable, organic meal at home--not an easy task, by the way--and invite a few friends who live in the hood.
On April 24 you can also attend dinner at Eagle Bluff Environmental Learning Center, Lanesboro, which will feature grilled mozzarella and tomato skewers, mixed greens salad with maple walnut vinaigrette, salmon mousse-filled trout, roasted asparagus, wild rice and mushroom cakes, and blackberry-filled chocolate cups. A vegetarian option is available on request. Prior to the meal Lanesboro Area Fisheries Supervisor Steve Klotz will present "Southeast Minnesota--the Land of 180 Trout Streams." The event begins at 5:30 pm and cost is $20 per person; for reservations (which are required) call 888-800-9558 or email: director@eagle-bluff.org.
Another option is not one Great Taste would recommend to others: She plans to fast on Earth Day. Some fluids, no solids. Maybe a locally raised boiled egg or root vegetables if her stomach starts to growl.
Okay, now for some comic relief. The"lighter" part (besides Great Taste standing on the scale after Earth Day). In case you missed this video last year, check it out:

Zinfandel Port.

Hmmmm....kalamata olives. Wonderful in Greek salad, but soup? If you go, hope you'll let Great Taste know what you think of it.

Finally! An area restaurant that reflects some local heritage. Great Taste looks forward to the February 5th opening of Kari's.
http://www.postbulletin.com/newsmanager/templates/localnews_story.asp?z=36&a=436298Great Taste is less enthusiastic about community seating though.....But why, you may ask, is that?
For many urbanites Lanesboro is about "getting away from it all" with a partner, family or friends.
What if you are trying to have a private romantic evening and you and significant other get seated with Ole and Lena?
Soooo, didja hear da one about da lovey dovey couple who head to a cute storefront restaurant and get seated mit.....and den Ole says....und Lena say.....Und den uffda! Dar gooes de marriage propoosal!
Readers if you are dining at Kari's this weekend or in the near future please share your impressions.
